I bought the good ceremonial matcha for lattes, then immediately funneled it into this Matcha Gelato in the Ninja Creami instead. No regrets. It's grassy and a little sweet with that real green tea bite, the dense gelato texture rather than airy ice cream. My sister, who lives at the matcha cafe down her block, said it tasted like the real deal, then ate most of the pint. Sift the matcha before whisking it into the base or you'll get bitter little green clumps. First spin looks powdery, add milk and re-spin until it's smooth.

Tip: freeze the pint on a level shelf for a full 24 hours. If the first spin looks crumbly, add a splash of milk and run Re-spin.
Ingredients
- Whole Milk1.25 cup
- Heavy Cream0.5 cup
- Granulated Sugar0.5 cup
- Egg Yolks3 whole
- Matcha Powder1.5 tbsp
- Vanilla Extract0.5 tsp
Directions
- 1Whisk the matcha with a splash of the milk into a smooth paste, then stir in the rest of the milk and the cream and warm until steaming.
- 2Beat the egg yolks with the sugar until pale, then temper with some of the hot matcha dairy.
- 3Return to the pan and cook gently to 165-175F, then stir in the vanilla.
- 4Strain, cool completely, pour into a Creami pint under the max line, and freeze flat for 24 hours.
- 5Spin on the GELATO preset, Re-spinning with a little milk if crumbly.
- 6Scoop and serve.
