Made this Mocha Coffee Protein Ice Cream in the Ninja Creami the night before a brutal early shift, basically a cold brew and dessert in one scoop. The instant coffee granules plus chocolate protein and chocolate pudding mix get it tasting like a frozen mocha from the coffee shop, smooth and not bitter. My wife stole a spoonful and now it's on rotation for her too. Dissolve the coffee granules in a little warm milk before mixing the pint, or you'll bite into gritty coffee specks. Freeze 24 hours, spin, add milk and re-spin if it's crumbly.

Tip: freeze the pint on a level shelf for a full 24 hours. If the first spin looks crumbly, add a splash of milk and run Re-spin.
Ingredients
- Reduced-fat Milk12 oz
- Chocolate Protein Powder1.5 scoop
- Instant Coffee Granules1 tsp
- Sugar-free Chocolate Instant Pudding Mix2 tbsp
- Granulated Sweeteneroptional1 tbsp
- Dark Chocolate Shavingsoptional1 tbsp
Directions
- 1Dissolve the instant coffee in the milk, then whisk in the protein, pudding mix, and sweetener until smooth.
- 2Pour the base into a Creami pint, keeping below the max line.
- 3Freeze flat for about 24 hours.
- 4Run the Lite Ice Cream preset on the frozen pint.
- 5Re-spin as needed for a smooth, creamy texture.
- 6Top with dark chocolate shavings and run the Mix-In cycle.
