Come fall I get a little unhinged about pumpkin, so this Pumpkin Pie Protein Ice Cream in the Ninja Creami shows up before the leaves even turn. The pumpkin puree and pie spice over a vanilla protein base taste like the inside of a pumpkin pie, creamy and smooth, no ice crystals. My wife topped hers with crushed graham crackers and said it was basically dessert that loves you back. Use real pumpkin puree, not pie filling, since the filling already has sugar and throws off the texture. Freeze 24 hours, spin, add milk and re-spin if needed.

Tip: freeze the pint on a level shelf for a full 24 hours. If the first spin looks crumbly, add a splash of milk and run Re-spin.
Ingredients
- Skim Milk10 oz
- Vanilla Protein Powder1.5 scoop
- Pumpkin Puree0.25 cup
- Pumpkin Pie Spice0.5 tsp
- Sugar-free Vanilla Instant Pudding Mix2 tbsp
- Crushed Graham Crackersoptional2 tbsp
Directions
- 1Whisk the milk, protein powder, pumpkin puree, pumpkin pie spice, and pudding mix until smooth.
- 2Pour into a Creami pint, staying below the max-fill line.
- 3Freeze flat for roughly 24 hours.
- 4Spin on the Lite Ice Cream preset.
- 5Re-spin if the base comes out crumbly.
- 6Top with crushed graham crackers and run the Mix-In program.
