Salted caramel is one of those flavors that's easy to mess up, but this Salted Caramel Protein Ice Cream in the Ninja Creami nails it with butterscotch pudding mix and caramel extract over vanilla protein. It comes out smooth and scoopable and tastes like the fancy pint without the sugar coma. My buddy Dave, a self-declared salted caramel snob, gave it a grudging nod, which from him is basically a standing ovation. Hit the top with a tiny pinch of flaky salt right before you eat it. Freeze flat overnight, and re-spin with a splash of milk if the first spin crumbles.

Tip: freeze the pint on a level shelf for a full 24 hours. If the first spin looks crumbly, add a splash of milk and run Re-spin.

Ingredients

  • Reduced-fat Milk12 oz
  • Vanilla Protein Powder1.5 scoop
  • Sugar-free Butterscotch Instant Pudding Mix2 tbsp
  • Caramel Extract0.5 tsp
  • Flaky Sea Saltoptional1 garnish
  • Sugar-free Caramel Sauceoptional1 tbsp

Directions

  1. 1Whisk the milk, vanilla protein, pudding mix, and caramel extract until completely smooth.
  2. 2Pour into a Creami pint, keeping below the max-fill line.
  3. 3Freeze the pint flat for about 24 hours.
  4. 4Run the Lite Ice Cream preset.
  5. 5Re-spin if the texture is dry or crumbly.
  6. 6Drizzle with caramel sauce, sprinkle a pinch of sea salt, and run the Mix-In cycle.
