Strawberry Cheesecake Protein Ice Cream

Strawberry season hit and I had a flat of berries going soft, so this Strawberry Cheesecake Protein Ice Cream in the Ninja Creami happened out of necessity. The Fairlife skim plus white chocolate pudding mix makes it taste like the cheesecake factory slice, and the diced fresh strawberries give it real fruit chunks instead of fake syrup. My mother-in-law, who's picky about cheesecake, asked for seconds, which never happens. Tip: stir the diced strawberries in after the spin so they stay in chunks. Toss them in raw before freezing and they freeze into little rocks you'll chip a tooth on.
How it spins
Tip: freeze the pint on a level shelf for a full 24 hours. If the first spin looks crumbly, add a splash of milk and run Re-spin.
Ingredients
- Fairlife Skim Milk10 oz
- Strawberry Protein Powder1.5 scoop
- Sugar-free White Chocolate Instant Pudding Mix2 tbsp
- Diced Fresh Strawberries0.25 cup
- Crushed Graham Crackersoptional2 tbsp
Directions
- 1Blend the milk, strawberry protein, pudding mix, and diced strawberries until mostly smooth.
- 2Pour into a Creami pint, keeping it under the max-fill line.
- 3Freeze flat for about 24 hours until solid.
- 4Process on the Lite Ice Cream preset.
- 5Re-spin once if the texture is still powdery.
- 6Top with crushed graham crackers and run the Mix-In cycle for a cheesecake finish.
