I held off on the cottage cheese ice cream trend for ages thinking it sounded weird, then I made this Cottage Cheese Vanilla Protein Ice Cream in the Ninja Creami and felt dumb for waiting. Blended smooth with milk, honey, vanilla, and pudding mix, you cannot taste the cottage cheese at all, just creamy vanilla. My skeptical wife guessed regular ice cream. Blend the base completely smooth before freezing or you'll get little curds in the final spin. Freeze flat for 24 hours, spin, and add a splash of milk and re-spin if it comes out crumbly.

Tip: freeze the pint on a level shelf for a full 24 hours. If the first spin looks crumbly, add a splash of milk and run Re-spin.

Ingredients

  • Low-fat Cottage Cheese1.5 cup
  • Reduced-fat Milk0.5 cup
  • Honey2 tbsp
  • Vanilla Extract1 tsp
  • Sugar-free Vanilla Instant Pudding Mix2 tbsp

Directions

  1. 1Blend the cottage cheese, milk, honey, vanilla, and pudding mix in a food processor until perfectly smooth.
  2. 2Pour the base into a Creami pint, keeping below the max-fill line.
  3. 3Freeze flat for roughly 24 hours.
  4. 4Process on the Lite Ice Cream preset.
  5. 5Re-spin if the texture comes out crumbly.
  6. 6Serve plain or add a mix-in and run the Mix-In cycle.
