Grasshopper-green mint chip was my favorite as a kid, so this Mint Chocolate Chip Protein Ice Cream in the Ninja Creami scratches a very specific nostalgia itch. Go easy on the peppermint extract though, I learned that lesson the hard way and the first batch tasted like toothpaste. A few drops is plenty. The Fairlife skim and vanilla pudding mix keep it creamy and scoopable. My daughter ate it without knowing it was protein, which is the whole goal. Add mini chocolate chips after the spin with the mix-in setting so they stay distributed instead of clumping at the bottom.
How it spins
Tip: freeze the pint on a level shelf for a full 24 hours. If the first spin looks crumbly, add a splash of milk and run Re-spin.
Ingredients
- Fairlife Skim Milk12 oz
- Vanilla Protein Powder1.5 scoop
- Peppermint Extract0.25 tsp
- Sugar-free Vanilla Instant Pudding Mix2 tbsp
- Mini Dark Chocolate Chipsoptional2 tbsp
Directions
- 1Whisk the milk, protein powder, peppermint extract, and pudding mix until smooth.
- 2Pour into a Creami pint, staying under the max-fill line.
- 3Freeze flat for around 24 hours.
- 4Spin on the Lite Ice Cream preset.
- 5Re-spin if the texture looks crumbly.
- 6Add the mini chocolate chips and run the Mix-In program to distribute them.
