Frozen Pimms Refresher

Every English summer I remember involved a jug of Pimm's, so a Frozen Pimm's Refresher felt overdue. Pimm's No. 1 with English lemonade and a touch of ginger ale runs through the Ninja Slushi into a slushy version of the classic, fruity and easy and faintly grown-up. My dad, who is deeply skeptical of anything frozen in a machine, admitted it tasted "basically right," which from him is a standing ovation. Toss in cucumber and strawberry slices after it's spun so they don't get pulverized. Garnish is half the Pimm's experience. Strictly 21 and up.

Directions

  1. 1In a large pitcher, combine the Pimms No. 1 and English lemonade.
  2. 2Gently pour in the ginger ale, then transfer the mixture into the Slushi vessel.
  3. 3Select the SPIKED SLUSH setting and let the machine run for 30 minutes.
  4. 4Dispense the slushy and garnish with sliced cucumber.

Tips

  • Pour your Pimms, lemonade, and ginger ale directly into the Slushi bowl at room temperature, no pre-chilling needed; the machine does the freezing work.
  • If your slush comes out too runny after 20 minutes, let it churn for another 10-15 minutes and check again, as texture varies with room temperature.
  • Dispense into chilled glasses straight from the tap to keep your drink colder longer.

Variations

  • Swap the ginger ale for tonic water and add a splash of elderflower cordial for an elderflower twist.
  • Use a fruit juice like apple or cranberry in place of the lemonade for a deeper flavor, keeping the Pimms and ginger ale the same.
  • Make it lighter by replacing half the Pimms with sparkling water while keeping the lemonade and ginger ale measurements steady.

FAQ

Can I use a different lemonade or does it have to be English?
English lemonade works best because it's less sweet than American versions and balances the Pimms better, but a quality homemade or European lemonade will work fine too.
Why didn't my drink freeze into slush after 45 minutes?
Check that your Slushi bowl is properly chilled and that you filled it to the line marked on the machine. If your kitchen is very warm, it may take closer to 60 minutes, so give it more time before assuming it's stuck.
Can I make this ahead and store it in the freezer?
The machine is designed to make it fresh and dispense it right away. If you want to store slush, keep it in an airtight container in the freezer for up to a few hours, though texture will degrade as it refreezes unevenly.
What if I want it less alcoholic?
Reduce the Pimms to three-quarters of the recipe and increase the lemonade by the amount you cut; the slush will still freeze properly with this swap.
