Funfetti Birthday Cake earned its spot the year I made it for my daughter's actual birthday in the Ninja Creami and her friends voted it better than the bakery cake. The dry yellow cake mix is the move here, it bakes that boxed-cake flavor straight into a creamy, scoopable base, and the sweetened condensed milk keeps it from freezing icy. Stir the sprinkles in at the re-spin so they don't bleed color everywhere and turn your ice cream gray. Tastes like the batter bowl you weren't supposed to lick. The kids were not subtle about wanting seconds.

Tip: freeze the pint on a level shelf for a full 24 hours. If the first spin looks crumbly, add a splash of milk and run Re-spin.

Ingredients

  • Whole Milk1 cup
  • Heavy Cream0.75 cup
  • Sweetened Condensed Milk0.33 cup
  • Dry Yellow Cake Mix3 tbsp
  • Vanilla Extract1 tsp
  • Rainbow Sprinklesoptional2 tbsp

Directions

  1. 1Whisk the milk, cream, sweetened condensed milk, and dry cake mix until smooth and lump-free.
  2. 2Stir in the vanilla, then let any foam settle.
  3. 3Pour into a Creami pint below the max line, seal, and freeze flat for 24 hours.
  4. 4Run the ICE CREAM preset, Re-spinning with a splash of milk if crumbly.
  5. 5Add the sprinkles to a center well and use the Mix-In program so they stay bright.
  6. 6Scoop and serve.
