Tahitian Vanilla Bean Dream

I almost skipped vanilla because it sounds boring, then I made this Tahitian Vanilla Bean Dream in the Ninja Creami and realized real vanilla bean paste is a different animal. You get those little black flecks and a warm, floral flavor that no extract touches. Whole milk, heavy cream, and sweetened condensed milk make it rich and dense, the kind of scoop that holds its shape on a cone. My mom, who claims she doesn't like sweets, ate a bowl standing at my counter. Don't rush the 24-hour freeze, it needs the full time to spin smooth.

Tip: freeze the pint on a level shelf for a full 24 hours. If the first spin looks crumbly, add a splash of milk and run Re-spin.

Ingredients

  • Whole Milk1 cup
  • Heavy Cream0.75 cup
  • Sweetened Condensed Milk0.33 cup
  • Granulated Sugar2 tbsp
  • Vanilla Bean Paste1 tbsp
  • Fine Salt1 garnish

Directions

  1. 1In a bowl, whisk the whole milk, heavy cream, sweetened condensed milk, and sugar until the sugar fully dissolves.
  2. 2Stir in the vanilla bean paste and a small pinch of salt so the seeds are evenly suspended.
  3. 3Pour the base into a Creami pint, staying under the max-fill line, then seal and freeze flat for about 24 hours.
  4. 4Run the frozen pint on the ICE CREAM preset.
  5. 5If it comes out crumbly, add a splash of milk and use Re-spin until smooth and creamy.
  6. 6Scoop and serve, or refreeze briefly to firm up.
