Honeydew Cucumber Mint Sorbet

Last August my wife kept saying the kitchen smelled like a sauna, so I figured I'd lean into it and make Honeydew Cucumber Mint Sorbet in the Ninja Creami instead of turning on the oven. I blended honeydew, cucumber, sugar, lime juice, and fresh mint, froze it overnight, and let the machine do its thing. Came out smooth, scoopable, and genuinely cool-tasting, like a spa water someone finally made worth eating. Ingredients

  • Honeydew Melon2.5 cups
  • English Cucumber0.5 cup
  • Granulated Sugar0.5 cup

  • Light Corn Syrup1 tablespoon
  • Pinch of Salt1 pinch
  • Fresh Mint Sprigoptional1 sprig

Directions

  1. 1Combine the sugar and water in a small saucepan over medium heat, stirring until the sugar fully dissolves. Remove from heat, stir in the mint leaves, and let the mixture steep for 10 minutes. Discard the mint leaves and allow the syrup to cool completely.
  2. 2Finely chop the honeydew melon and peeled cucumber into small pieces. Press or squeeze out any excess liquid from the cucumber using a paper towel so the base is not too watery.
  3. 3Stir together the cooled mint syrup, honeydew, cucumber, lime juice, corn syrup, and salt until everything is well combined. The mixture should be smooth and uniform.
  4. 4Pour the base into a Ninja Creami pint container, filling it to the max fill line. Place the lid on securely and set the pint on a flat, level surface in the freezer. Freeze for a full 24 hours.
  5. 5After 24 hours, remove the pint from the freezer, take off the lid, and install the pint into the Ninja Creami outer bowl. Lock the bowl assembly into the machine and select the SORBET preset.
  6. 6Once the cycle completes, check the texture. If the sorbet appears crumbly or powdery, add a splash of cold lime juice or water directly to the pint and run the Re-spin function until smooth and creamy.
  7. 7Scoop into a chilled bowl or glass and garnish with a fresh mint sprig if desired. Serve immediately for best texture.

Tips

  • Freeze your pint completely solid for the full 16-24 hours; if you skip freezing time, you'll get a slushy result instead of creamy sorbet when you run the Creami program.
  • After you spin the pint, if the texture looks crumbly or icy, add a splash of cold water or simple syrup and re-spin to get that smooth, scoopable consistency.
  • Toast your mint leaves gently in your hand before adding them to the base to release more flavor, then strain the liquid through a fine mesh before freezing.

Variations

FAQ

Can I use regular sugar instead of granulated sugar?
Yes, but you'll need to stir it well into the warm liquid to make sure it dissolves completely before it cools and you pour it into the Creami pint. Undissolved sugar can make the texture grainy after freezing and spinning.
My frozen pint came out crumbly when I ran the Sorbet program. What went wrong?
