My wife took one spoonful of this Honeydew Mint Lime Smoothie Bowl and just went quiet for a second, which in our house means it's actually good. The Ninja Creami turns the frozen honeydew and coconut milk base into something genuinely creamy and scoopable, with the lime and mint hitting right after, clean and a little sharp. Practical tip: honeydew is very watery, so if your base spins out crumbly, add just a tiny splash of coconut milk and re-spin before you panic. She asked if there was more, and there was not.
How it spins
Tip: freeze the pint on a level shelf for a full 24 hours. If the first spin looks crumbly, add a splash of milk and run Re-spin.
Ingredients
- Honeydew Melon2 cups
- Full Fat Coconut Milk0.5 cup
- Fresh Lime Juice2 tablespoons
- Fresh Mint Leaves8 leaves
- Honey2 tablespoons
- Vanilla Greek Yogurt0.25 cup
- Lime Zest1 teaspoon
- Granolaoptional0.25 cup
- Sliced Kiwioptional0.5 cup
- Shredded Coconutoptional2 tablespoons
- Fresh Mint Sprigoptional1 sprig
Directions
- 1Combine honeydew melon, coconut milk, lime juice, mint leaves, honey, vanilla Greek yogurt, and lime zest in a bowl and stir until fully mixed and the honey is dissolved.
- 2Pour the base into a Ninja Creami pint container, filling to the max fill line. Place the lid on and set the pint on a flat, level surface in the freezer.
- 3Freeze for 24 hours until the base is completely solid throughout.
- 4Remove the pint from the freezer and let it sit on the counter for 5 minutes. Install the pint into the Ninja Creami outer bowl and lock it into the machine.
- 5Run the SMOOTHIE_BOWL preset. If the result appears crumbly or powdery after processing, add a small splash of coconut milk, then select Re-spin and process again until smooth and creamy.
- 6Scoop the finished smoothie bowl into a serving bowl and top with granola, sliced kiwi, shredded coconut, and a fresh mint sprig. Serve immediately.
Tips
- Freeze your pint completely flat and level for 16-24 hours so it spins evenly; a tilted pint will scoop unevenly.
- If your smoothie bowl comes out too crumbly or powdery after spinning, add a splash of coconut milk and re-spin the pint for a creamier texture.
- Zest your lime before juicing it, so you have the zest ready to garnish right when you scoop the finished bowl.
Variations
- Swap honeydew for cantaloupe melon and keep everything else the same for a slightly sweeter, earthier version.
- Use regular plain yogurt instead of Greek yogurt if you want a thinner consistency that spins more smoothly.
- Reduce honey to 2 tablespoons and add 1 tablespoon of fresh ginger juice to the base for a brighter, spicier kick.
FAQ
- Can I use bottled lime juice instead of fresh?
- Yes, bottled works fine, though fresh juice tastes brighter. Use the same amount, about 1/4 cup, and freeze your pint flat as usual.
- Why is my smoothie bowl coming out icy and crumbly?
- Your pint might not be completely frozen solid yet, or the base might be too low in fat. Make sure it freezes for the full 16-24 hours, then add a splash of coconut milk and re-spin to get a creamier texture.
- Can I make this lighter with less coconut milk or yogurt?
- You can reduce the coconut milk slightly, but the base needs enough fat and liquid to freeze properly and spin smoothly. If you go too light, it will freeze hard and shave icy instead of creamy.
- How long can I store a frozen pint before spinning it?
- A frozen pint will keep in your freezer for about a week before the texture starts to break down. Spin it within a few days for the best creaminess.
