Kelsie sent this one in and honestly, thank you, because I would not have thought to try it on my own. I ran it through the Ninja Creami and the result was this thick, deeply chocolatey malt-flavoured ice cream that tastes like the bottom of a Milo tin in the best possible way. The texture came out really creamy on the first spin, no re-spin needed. One thing worth knowing: don't skimp on the Milo when you mix it in, it needs a generous amount or the flavour kind of disappears into the cream.
How it spins
Tip: freeze the pint on a level shelf for a full 24 hours. If the first spin looks crumbly, add a splash of milk and run Re-spin.
Ingredients
- Whole Milk240 ml
- Thickened/Heavy Cream120 ml
- Sweetened Condensed Milk100 g
- Milo Powder3 tbsp
Directions
- 1Whisk the milk, cream, condensed milk and Milo together in a jug until the Milo is fully dissolved and the mixture is smooth.
- 2Pour the mixture into a single Ninja Creami pint container, filling no higher than the max line, and freeze completely flat for at least 24 hours.
- 3Process the frozen pint on the Ice Cream setting. If it comes out crumbly, add a splash of milk and run the Re-spin program until creamy.
Tips
- Freeze the pint on a completely flat surface so the base sets evenly. An uneven freeze can lead to a lopsided spin and patchy texture.
- After the first spin, if the ice cream looks crumbly or powdery, add a tablespoon of milk or cream to the pint and re-spin. This fixes the texture almost every time.
- The cream and condensed milk are what make it scoopable, so keep those full-fat. The milk is just there to fill the pint and help it spin smooth.
- Let the frozen pint sit on the counter for about 5 minutes before inserting it into the Creami, especially in cold weather. This helps the machine process it more smoothly.
Variations
- Swap half the Milo for Ovaltine or a chocolate malt powder to get a slightly different malt flavour with the same creamy base.
- Stir a handful of Milo Nuggets or crushed Milo cereal into the pint after the first spin using the Mix-In program for a crunchy texture throughout.
- Replace the condensed milk with sweetened coconut condensed milk for a subtle coconut flavour that pairs really well with the Milo.
FAQ
- Can I use lite or reduced-fat cream instead of thickened cream?
- You can, but the ice cream will likely come out icier and less creamy after spinning. Full-fat cream gives the best texture in the Ninja Creami.
- How long does the ice cream keep in the freezer?
- Store the pint with the lid on for up to two weeks. Before eating again, let it sit out for a few minutes and re-spin it to bring back the creamy texture.
- Why did my ice cream come out powdery or crumbly after spinning?
- This usually means the base was frozen too hard or the fat content was a bit low. Add a small splash of milk or cream to the pint and run the re-spin function to fix it.
- Can I reduce the amount of Milo to make it less sweet?
- Yes, just cut back the Milo powder by a tablespoon or two. The condensed milk already brings plenty of sweetness, so the ice cream will still taste great.
