Peach Bellini Slush

Made this Peach Bellini Slush for brunch and it disappeared faster than the actual food, which tells you everything. The peach mix, champagne, and a little rum and schnapps go through the Ninja Slushi and come out as a frosty, peachy slush that drinks like a bellini that wandered off to the pool. My sister-in-law called it "breakfast you're allowed to feel fancy about." Add the champagne gently and last so you keep some of the fizz; dumping it all in early flattens it out. Mimosa people, this is your upgrade. Adults only, naturally.

Ingredients

  • Margarita Man Peach Mix7 oz
  • Champagne14 oz
  • Rum4 oz
  • Peach Schnapps2 oz
  • Water37 oz

Makes ~64 oz Β· est. 5.8% ABV

Directions

  1. 1In a large pitcher, combine the concentrated peach mix, water, champagne, rum, and peach schnapps.
  2. 2Whisk the mixture gently until all elements are fully integrated.
  3. 3Pour the mixture into the Slushi machine.
  4. 4Select the SPIKED SLUSH mode and let the machine run for 45 minutes before dispensing.

Tips

  • Pour your liquid base at room temperature directly into the Slushi bowl, and the machine will handle the chilling and churning without any prep work needed.
  • Check the consistency after 30 minutes by opening the lid, then every 10 minutes after that, since ambient temperature affects how quickly it reaches perfect slush texture.
  • Scoop from the tap when the mixture has a thick, slushy consistency that holds its shape but still moves slightly, not when it's liquid or rock solid.

Variations

  • Swap the Margarita Man Peach Mix for a quality peach nectar mixed with fresh lemon juice for a more natural fruit flavor while keeping the same champagne and rum base.
  • Use prosecco instead of champagne for a slightly sweeter, more approachable version, or substitute the peach schnapps with amaretto for an almond note that complements the peach beautifully.
  • Skip the rum entirely and increase the peach schnapps to 1 cup for a lighter, less boozy slush that's perfect for daytime gatherings.

FAQ

Can I make this without peach schnapps?
Yes, you can replace it with additional champagne or prosecco, though you'll lose some of the peach intensity and sweetness. Add an extra 0.5 cup of your preferred sparkling wine to keep the liquid ratio consistent for the machine.
Why didn't my slush freeze or why is it still too liquid after 45 minutes?
Room temperature can affect freezing time; warmer kitchens may need 60 minutes instead of 30. Make sure the bowl is seated properly in the machine and that you're not opening the lid too frequently, which lets cold escape.
Can I store leftover slush in my freezer?
Yes, transfer it to a freezer-safe container and it will keep for up to 2 weeks, though it may become icy. Thaw it slightly at room temperature for 5 minutes before scooping, or re-run it through the Slushi machine for 10 minutes to restore the original texture.
What if I want a lighter, less boozy version?
Reduce the rum to 0.5 cup and replace it with water or peach juice to maintain the liquid volume the machine needs. You'll get a refreshing slush with half the alcohol content while keeping the peach flavor front and center.
