Strawberry Coconut Smoothie Bowl

My daughter took one bite of this Strawberry Coconut Smoothie Bowl and just stared at me like I'd finally done something right, which honestly felt as good as the bowl tasted. The Ninja Creami turns the frozen coconut milk and strawberry base into something genuinely creamy and scoopable, not icy, and it smells exactly like a smoothie place at the mall. One practical thing: full-fat coconut milk is non-negotiable here, because the lower-fat stuff spins up crumbly and you'll be adding liquid and re-spinning twice before you give up and eat it anyway.

Tip: freeze the pint on a level shelf for a full 24 hours. If the first spin looks crumbly, add a splash of milk and run Re-spin.

Ingredients

  • Frozen Strawberries1.25 cups
  • Full-Fat Coconut Milk0.5 cup
  • Greek Yogurt0.25 cup
  • Honey1 tbsp
  • Vanilla Extract0.5 tsp
  • Granolaoptional0.25 cup
  • Fresh Strawberry Slicesoptional0.25 cup
  • Toasted Coconut Flakesoptional2 tbsp
  • Sunflower Seedsoptional1 tbsp

Directions

  1. 1Combine the frozen strawberries, coconut milk, yogurt, honey, and vanilla in a bowl and stir until uniform.
  2. 2Pour into a Creami pint under the max fill line, seal, and freeze flat for 24 hours.
  3. 3Run the SMOOTHIE_BOWL preset. If crumbly, add a splash of coconut milk and Re-spin.
  4. 4Scoop into a bowl and top with granola, fresh strawberry slices, coconut flakes, and sunflower seeds.

Tips

  • Freeze your pint flat and completely solid for a full 24 hours before spinning; a partially frozen pint will come out crumbly instead of creamy.
  • If your bowl comes out icy or powdery after spinning, add a splash of milk or coconut cream and run the Smoothie Bowl program again for a better texture.
  • Use full-fat coconut milk, not lite; the fat content is what makes the bowl creamy and smooth when the Creami spins it.

Variations

  • Swap half the strawberries for frozen mango or pineapple for a tropical twist, keeping the coconut milk as your base.
  • Use plain yogurt instead of Greek yogurt for a thinner consistency that spins more easily, or add an extra tablespoon of honey for more sweetness.
  • Replace vanilla extract with almond extract or a teaspoon of lime juice for a different flavor profile.

FAQ

What if my pint didn't freeze solid enough?
Pop it back in the freezer for another 8 to 12 hours until rock hard throughout. If you try to spin a partially frozen pint, you'll get a crumbly mess instead of a smooth bowl.
Can I make this lighter or lower calorie?
Use light coconut milk and nonfat Greek yogurt, but know the texture won't be quite as creamy when you spin it. You can add a splash of almond milk after spinning if it comes out too powdery.
How long does a frozen pint keep in the freezer?
Up to 2 weeks, though the texture is best within the first week. After that, ice crystals can form and make it spin less smoothly.
Why did my bowl come out more like shaved ice?
Your pint may not have frozen solid enough, or the mix might be too icy with not enough fat and yogurt. Make sure you use full-fat coconut milk and freeze for a full 24 hours next time.
