Watermelon Cooler Sorbet

Half a watermelon was going soft on my counter, so I cubed it, froze a pint, and the Ninja Creami turned it into Watermelon Cooler Sorbet that tasted like a Jolly Rancher minus the fake part. My daughter took one bite and asked if it was candy. The lime is what saves it from going flat and one-note. Watermelon is mostly water, so the first spin can come out icy and crumbly. Add a splash of water and re-spin once, and it tightens into something smooth and scoopable instead of a slushy mess.

Tip: freeze the pint on a level shelf for a full 24 hours. If the first spin looks crumbly, add a splash of milk and run Re-spin.

Ingredients

  • Fresh Watermelon, Cubed2.5 cup
  • Lime Juice1 tbsp
  • Granulated Sugar2 tbsp

Directions

  1. 1Blend the watermelon, lime juice, and sugar into a smooth puree.
  2. 2Pour the puree into a Creami pint, keeping it under the fill line.
  3. 3Freeze flat for roughly 24 hours.
  4. 4Process the frozen pint on SORBET.
  5. 5Watermelon is very watery, so add a tablespoon of water and Re-spin if crumbly.
  6. 6Serve immediately while slushy.
