Tiki night at our place started as a joke and now this Frozen Mai Tai is the reason people show up. The Ninja Slushi blends light and dark rum, orange liqueur, lime, and orgeat into a slushy, smooth drink with that almondy tiki-bar flavor the orgeat brings. My friend Theo put a little paper umbrella in his and refused to take it out all night. Strictly 21 and up, the two rums sneak up on you. Don't skip the orgeat, because without that almond syrup it's just a rum slushie, and the orgeat is the whole personality.

Ingredients

  • Light Rum6 oz
  • Dark Rum4 oz
  • Orange Liqueur3 oz
  • Fresh Lime Juice3 oz
  • Orgeat Almond Syrup3 oz
  • Cold Water18 oz
  • Pineapple Wedgeoptional1 garnish

Directions

  1. 1Mix both rums, orange liqueur, lime juice, orgeat, and water in a pitcher.
  2. 2The dark rum floats best when stirred in last for color depth.
  3. 3Pour the blend into the Slushi vessel below the fill line.
  4. 4Lock the lid and start the SPIKED SLUSH preset.
  5. 5Let it run until smooth and frozen, about 36 minutes.
  6. 6Dispense and garnish with a pineapple wedge.

Tips

  • Pour your liquid base into the Slushi bowl at room temperature, not chilled, so the machine can properly churn and freeze it over 20-60 minutes.
  • Check the consistency at the 20-minute mark by looking through the machine's window; if it's still syrupy, give it another 10-15 minutes before dispensing.
  • Use fresh lime juice, not bottled, so your Mai Tai stays bright and doesn't taste flat when frozen.

Variations

  • Swap the dark rum for spiced rum for a warmer, slightly peppery kick that works great with the almond and orange.
  • Use coconut rum instead of one of the light rums if you want a tropical twist and a creamier texture.
  • Add a splash of pineapple juice to the base for a fruitier version that pairs well with the orgeat.

FAQ

What if my Slushi didn't freeze into that perfect slushy texture?
It usually needs more time, especially in a warm kitchen; let it churn for the full 60 minutes. Also check that you poured the base into the machine first before turning it on, and that the bowl is sitting properly against the cooling mechanism.
Can I use bottled lime juice instead of fresh?
You can, but fresh lime juice tastes noticeably brighter and gives you a better Mai Tai. If you're in a pinch, bottled works, but aim for fresh when you can.
How long can I keep the slush in the machine after it's done?
Leave it running in the machine for up to 30 minutes after it reaches full slush texture so it stays creamy and doesn't refreeze into solid ice. After 30 minutes it starts to get too icy.
Can I make this less boozy or more fruity?
You can reduce the rum by half a cup and add pineapple or orange juice instead; the machine will still churn it into slush fine. Just know the flavor will be sweeter and less spirit-forward.
