Frozen Strawberry Daiquiri

First time I ran this Frozen Strawberry Daiquiri through the Ninja Slushi, my wife claimed it was for quality control and then quality-controlled most of the pitcher. It comes out slushy and smooth, that exact poolside texture, with the lime keeping the strawberry from going syrupy sweet. The rum disappears a little too well, so pace yourself, this one's strictly 21 and up. Don't cut the simple syrup to be healthy, because sugar is what keeps it from freezing into a solid strawberry brick you have to chip at with a spoon.

Your machine size

Slushi 64 oz (Standard) Β· quantities scaled Γ—1

⚠️ Over the hard-spirit limit

~8.0 oz of 40% spirit exceeds the ~7.8 oz max for this batch size. Dilute or scale down the liquor.

Ingredients

  • White Rum8 oz
  • Strawberry Puree16 oz
  • Fresh Lime Juice4 oz
  • Simple Syrup6 oz
  • Cold Water16 oz
  • Fresh Strawberryoptional1 garnish

Makes ~52 oz Β· est. 6.4% ABV

Directions

  1. 1Blend the strawberries into a smooth puree.
  2. 2Stir the puree with rum, lime juice, simple syrup, and cold water in a pitcher.
  3. 3The added water keeps the alcohol moderate so it freezes properly.
  4. 4Pour the mixture into the Slushi vessel below the max line.
  5. 5Seal the lid and select the SPIKED SLUSH preset.
  6. 6Run about 38 minutes, then dispense and garnish with a strawberry.

Tips

  • Pour your liquid base at room temperature into the Slushi bowl, then let the machine do the work for 20-60 minutes depending on your freezer temperature and desired thickness.
  • For a smoother scoop, wait until the mixture reaches that soft-serve consistency rather than pulling the tap when it's still too liquid.
  • Make sure your simple syrup is fully dissolved before pouring, so you get even freezing throughout the batch.

Variations

  • Swap strawberry puree for fresh raspberries that you've mashed and strained, keeping the ratio the same for a berry blend.
  • Use coconut rum instead of white rum and add a splash of coconut cream to the base for a creamier tropical version.
  • Go lighter by replacing half the rum with sparkling water, then adjust your simple syrup up slightly to keep the sweetness balanced.

FAQ

Can I use frozen strawberries instead of puree?
Thaw them completely, strain out excess juice, and push them through a fine-mesh strainer to make puree. You want liquid going into the machine, not chunks.
Why isn't my daiquiri getting slushy after an hour?
Check that your freezer is cold enough, at least 0 degrees Fahrenheit. If it's warmer, the machine can't chill fast enough. Also make sure you're pouring liquid base only, no ice or frozen ingredients.
Can I make this drink ahead of time?
The slush consistency is best served right from the tap when it's done churning. If you pour it into a glass and freeze it, it'll turn into a hard popsicle rather than a drinkable slush.
How do I make it less boozy?
Reduce the rum to 2 ounces and add 2 extra ounces of cold water to keep the same batch size. You may want a bit more simple syrup to compensate for less rum flavor.
